Yes. However, you cannot specify the delivery date for refrigerated products ordered online. (Refrigerated products are delivered on the day the ship returns to port.)
Frozen products will be delivered on the specified date, 5 business days after the order is placed. (This does not include the peak order period in December, or long store holidays such as the New Year's and Obon holidays.)
Please note that delivery may not be possible at the specified time due to weather or road conditions.

Can I issue a receipt?

Yes. We can issue a receipt if you let us know when you place your order by phone. At that time, please let us know the name and notes on the receipt. *If no notes are specified, we will write "item price". *For items that cannot be bundled, we cannot bundle them with the product, so we will create a separate receipt and send it by mail. *We do not issue receipts without a date or name. Please note that we may not be able to issue receipts more than one month after confirming your payment. Also, please note that we do not reissue receipts. *In the case of cash on delivery, the "customer copy" that you receive from the delivery company also serves as a receipt. Please note that we cannot issue such receipts at our store.

As this is a fresh product, as a general rule we cannot accept it.

How do I thaw frozen raw crabs?

Thaw under running water (about 10 minutes) or by soaking in water (about 20 minutes).

"Matsuba crab," "Echizen crab," "Shibayama crab," "Tsuiyama crab," "Maito crab," "Snow crab"?

First of all, all of the crabs listed here are snow crab varieties.

◆Snow crabs caught in Fukui Prefecture are collectively called "Echizen crab."

◆Snow crabs caught in the San'in region are collectively called "matsubagani."

Among these, the best quality Matsuba crabs caught at each fishing port came to be called brand crabs, and were named after the fishing port.

Therefore, all of the above crabs are "snow crabs" in terms of variety. However, that doesn't mean they are exactly the same. Crab fishing is done in different fishing grounds depending on the fishing port. If the location where the crab is landed is different, the quality of the crab will of course be different.
Each fishing port has its own characteristics. Snow crab has a set fishing season and can only be landed in the winter (November 6th to March 20th).

What are "Snow Crab", "Red Snow Crab" and "Kasumi Crab"?

First, let me explain the difference between "snow crab" and "red snow crab."
As mentioned in the question above, "snow crab" refers to the crab whose fishing season is generally during the crab season, which is winter (November 6th to March 20th).
The fishing season for red snow crab is from September 1st to May 31st, and it is known as a crab that can be eaten all year round.
Compared to "snow crab," it is a little thinner and its bright red color makes the difference immediately obvious. Each has its own unique flavor, so preferences may vary depending on the person eating it.
All that remains is the Kasumi crab.
Kasumi Fishing Port is a mecca for landing "red snow crabs." Among the "red snow crabs" landed at Kasumi Fishing Port, the ones with the best quality are now given the title "Kasumi crab."

I received some boiled crabs, but they have turned black. Can I still eat them?

Boiling crabs is very difficult, and it is said that it takes 10 years to master the art, and a lifetime to boil them.
If crab is boiled for too long, it will lose moisture and the meat will become dry.
At our company, we aim to boil the crab so that it retains plenty of moisture and retains plenty of flavor.
In other words, we are trying to push the boundaries.
However, if the boiling time is even 10 seconds too short, raw parts will remain, and the proteolytic enzymes remaining in those raw parts will become active over time, causing the belly area to turn black. This blackening is known locally as "yu-ashi."
The blackening does not occur immediately after boiling. It occurs one or two days after boiling, so it is difficult to judge, and in some cases the blackening may occur after the fish arrives at the customer's place.
It's fine to eat it if you remove the blackened parts, but if there are too many blackened parts, please let us know and we will replace it.
